Glazed Rainbow Carrots with Ricotta
If you ever come across these delicious, colourful beauties at a farmer’s market or in a shop, don’t hesitate to grab a bunch. These rainbow carrots are a delicious meal in their own right, as well as serving as the perfect accompaniment to a roast or in addition to other veggie dishes.
The tops can be chopped up as garnish while the ricotta, honey, chilli, pistachios and orange really bring a lot of flavour. This cooking method brings out a lot of sweetness and nuttiness with a good crisp caramelisation on the outside of the carrots.
